Be careful not to overstuff the cookies, as the filling might spill out and make a mess in the oven. Also, make sure to let the cookies cool before biting into them, as the marshmallow filling can be extremely hot!
Start by preheating your oven to 350°F (175°C). In a mixing bowl, cream together 1 cup of softened butter, 1 cup of granulated sugar, and 1 cup of brown sugar until light and fluffy. Beat in 2 eggs and 1 teaspoon of vanilla extract until well combined.

Arrange the stuffed cookies on a baking sheet lined with parchment paper, leaving some space between each cookie. Bake in the preheated oven for 10-12 minutes or until the edges are golden brown. The centers will be slightly undercooked, but they will firm up as they cool.
