Be careful when working with a kitchen torch as it can be dangerous. Make sure to follow safety guidelines and keep a fire extinguisher handy, just in case.
In a medium-sized saucepan, mix together 1 can of coconut milk, 1/4 cup of cornstarch, 1/2 cup of granulated sugar, and 1/2 teaspoon of vanilla extract. Whisk everything together until the mixture is smooth and there are no lumps.
Place the saucepan over medium heat and whisk continuously until the mixture starts to thicken. This should take about 5-7 minutes. Make sure to keep stirring to prevent any lumps from forming.
Once the mixture has thickened, remove it from the heat and add 1 tablespoon of vegan butter and 1/2 teaspoon of almond extract. Stir until the butter has melted and everything is well combined.
Divide the mixture into 4 ramekins or small bowls. Let them cool for a few minutes, then cover with plastic wrap and refrigerate for at least 2 hours, or until set.
When you're ready to serve, sprinkle a thin layer of granulated sugar on top of each crème brûlée. Using a kitchen torch, carefully caramelize the sugar until it forms a golden crust. Don't worry if you don't have a torch, you can also place the ramekins under a broiler for a few minutes, but keep a close eye on them!
