In a bowl, combine 1 cup of all-purpose flour, 2 tablespoons of sugar, 1 teaspoon of baking powder, and a pinch of salt. Mix well to ensure all the ingredients are evenly combined.
In a separate bowl, whisk together 1 cup of plant-based milk, 2 tablespoons of melted vegan butter, and 1 teaspoon of vanilla extract. Pour the wet ingredients into the dry ingredients and mix until a smooth batter forms.
Fill a large pot or deep frying pan with vegetable oil, about 2 inches deep. Heat the oil over medium heat until it reaches 350°F (175°C). Prepare a plate lined with paper towels nearby for draining the cooked churros.
Transfer the churro batter into a piping bag fitted with a star tip. This will give your churros those classic ridges. If you don't have a piping bag, you can use a ziplock bag with the corner snipped off.
Slowly pipe 4-6 inch strips of dough into the hot oil, cutting them off with a pair of scissors. Be careful not to overcrowd the pan. Fry the churros for about 2-3 minutes on each side, until golden brown. Flip them with tongs to ensure even cooking.
While the churros are still hot, roll them in a mixture of ½ cup sugar and 1 tablespoon of cinnamon. Make sure to coat them evenly for that irresistible cinnamon-sugar flavor.
Place the coated churros on the paper towel-lined plate to absorb any excess oil. Serve them warm and enjoy them as they are or dip them in your favorite vegan chocolate sauce. Get ready for pure churro bliss!
