In a mixing bowl, combine 1 cup all-purpose flour, 2 tablespoons granulated sugar, 1/4 teaspoon salt, 1/2 teaspoon baking powder, and 1/4 teaspoon ground cinnamon. Whisk them together until well combined.
In a separate bowl, crack open 2 large eggs and beat them lightly. Pour the beaten eggs into the dry ingredients mixture. Then, slowly whisk in 1 cup of coconut milk and 1/2 cup of water until you have a smooth batter.
Place a non-stick skillet or crepe pan over medium heat. Allow it to preheat for a few minutes, then lightly grease the pan with cooking spray or a small amount of butter.
Once the pan is hot, pour about 1/4 cup of crepe batter into the center of the pan. Tilt and rotate the pan to spread the batter evenly, creating a thin layer. Cook for about 1-2 minutes until the edges start to lightly brown.
Carefully flip the crepe using a spatula and cook for an additional 1-2 minutes on the other side. Repeat this process with the remaining batter, stacking the cooked crepes on a plate as you go.
