  • Onions 1 medium-sized
  • Bell Peppers 1 or 2, any color
  • Carrots 2 medium-sized

  • Ginger 1 tablespoon, minced
  • Curry Powder 1 tablespoon
  • Turmeric 1/2 teaspoon
  • Cumin 1/2 teaspoon
  • Coriander 1/2 teaspoon
  • Salt and Pepper To taste
  • Fresh Cilantro or Parsley For garnish
