Gather all the necessary ingredients for making your vegan Crème Brûlée and caramel sauce. You'll need: 1 1/2 cups of full-fat coconut milk, 1/2 cup of granulated sugar, 1/4 cup of cornstarch, 1/4 teaspoon of turmeric (for color), 1 teaspoon of pure vanilla extract, and a pinch of salt.
In a small saucepan, heat 1/4 cup of granulated sugar over medium heat. Stir continuously with a wooden spoon until the sugar melts and turns into a golden-brown caramel. Be patient, it may take a few minutes. Once the caramel is ready, carefully pour in 1/4 cup of warm water while stirring. Be cautious as it will bubble vigorously. Continue to cook and stir until the caramel sauce is smooth and slightly thickened. Remove from heat and set aside to cool.
In a medium-sized saucepan, whisk together the coconut milk, 1/4 cup of granulated sugar, cornstarch, turmeric, vanilla extract, and salt. Place the saucepan over medium heat and cook while stirring constantly until the mixture thickens and becomes creamy. This should take about 5-7 minutes. Remove from heat and let it cool for a few minutes.
Divide the Crème Brûlée mixture evenly between ramekins or dessert dishes. Gently tap each dish on the counter to remove any air bubbles. Place the dishes in the refrigerator and chill for at least 4 hours, or preferably overnight, to allow the Crème Brûlée to set completely.
Sprinkle a thin layer of granulated sugar over each chilled Crème Brûlée. Using a kitchen torch, carefully melt and caramelize the sugar until it forms a crisp and golden crust. If you don't have a torch, you can place the dishes under a broiler for a few minutes, but keep a close eye on them to prevent burning.
Once the sugar has hardened, your Vegan Crème Brûlée is ready to be indulged in! Serve it with a drizzle of the homemade caramel sauce and enjoy the rich creamy texture with a satisfying crack of caramel on top.
