In a bowl, mix together 2 cups of all-purpose flour, 2 tablespoons of sugar, 2 teaspoons of instant yeast, and a pinch of salt. In a separate bowl, warm up 3/4 cup of plant-based milk and 2 tablespoons of melted vegan butter. Pour the warm mixture into the dry ingredients and stir until a soft dough forms. Knead the dough for about 5 minutes until smooth and elastic.
Place the dough in a greased bowl, cover it with a clean towel, and let it rise in a warm place for about 1 hour or until doubled in size. This is a good time to catch up on your favorite TV show or practice your dancing skills. Just make sure you don't miss the next step!
While the dough is rising, prepare the delicious filling for your cruffins. In a small bowl, combine 1/2 cup of brown sugar, 2 tablespoons of ground cinnamon, and 1/4 cup of softened vegan butter. Mix everything together until well combined. You can adjust the amount of cinnamon according to your taste preference. If you're a cinnamon lover like me, feel free to add a little extra!
Once the dough has doubled in size, gently punch it down to release any air bubbles. On a lightly floured surface, roll out the dough into a rectangular shape, about 1/4 inch thick. Spread the delicious cinnamon filling evenly over the surface of the dough. Roll the dough tightly from the short side, like you're rolling up a poster of your favorite band from your teenage years. With a sharp knife, cut the rolled dough into 6 equal portions.
Preheat your oven to 375°F (190°C). Grease a muffin tin or line it with parchment paper. Place each portion of the rolled dough into a muffin cup, with the spiral side facing up. Bake in the preheated oven for about 20-25 minutes, or until the cruffins are golden brown and irresistibly fragrant. Remove from the oven and let them cool for a few minutes. You can enjoy them warm or at room temperature. Serve with a drizzle of icing or a sprinkle of powdered sugar, if desired. Get ready to take a bite into pure vegan bliss!
