Gradually pour in 2 cups of unsweetened plant-based milk, whisking constantly to prevent lumps. Bring the mixture to a simmer and cook for 5 minutes, or until it thickens.
Stir in 1 cup of nutritional yeast flakes, 1 teaspoon of garlic powder, 1/2 teaspoon of onion powder, and a pinch of turmeric for color. Season with salt and pepper to taste. Continue to cook for another 2-3 minutes, allowing the flavors to meld together.
Remove the saucepan from heat and add 1 1/2 cups of your favorite vegan cheese, shredded. Stir until the cheese is fully melted and incorporated into the sauce. Feel free to get creative with different flavors of vegan cheese to suit your taste.
