Start by peeling and chopping 2 pounds of potatoes into small chunks. Place the potatoes in a large pot and cover them with cold water. Add a pinch of salt and bring the water to a boil. Let the potatoes cook for about 15 minutes or until they become tender and easily mashable.
While the potatoes are cooking, let's make the mushroom gravy! In a large skillet, melt 2 tablespoons of vegan butter over medium heat. To finish the mushroom gravy, sprinkle 2 tablespoons of all-purpose flour over the cooked mushrooms and onions. Stir well to combine and cook for a minute to remove the raw flour flavor. Gradually add 2 cups of vegetable broth, stirring constantly until the mixture thickens. Reduce the heat and let the gravy simmer for about 5 minutes to allow the flavors to meld together.
Now it's time to bring everything together! Serve the creamy mashed potatoes in a bowl and generously pour the mushroom gravy on top. Garnish with fresh herbs like parsley or chives, if desired. Dig in and savor every satisfying spoonful!
