Mixing the dough

In a large mixing bowl, combine 2 cups of all-purpose flour, 1/4 cup of granulated sugar, 1 tablespoon of baking powder, and a pinch of salt. In a separate bowl, whisk together 1 cup of milk, 2 tablespoons of melted butter, and 1 teaspoon of vanilla extract. Gradually add the wet ingredients to the dry ingredients, stirring until the dough comes together.

Shaping the doughnuts

On a lightly floured surface, roll out the dough to a 1/2-inch thickness. Use a doughnut cutter or a round biscuit cutter to cut out doughnut shapes. If you don't have a cutter, you can also use a glass and a smaller round object, like a bottle cap, to create the doughnut shape. Place the doughnuts on a baking sheet lined with parchment paper.

Frying the doughnuts

Heat at least 2 inches of vegetable oil in a deep, heavy-bottomed pot or deep fryer to 375°F (190°C). Carefully add a few doughnuts to the hot oil, being careful not to overcrowd the pot. Fry for about 2 minutes on each side, until golden brown. Remove the doughnuts from the oil with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
