Start by soaking 1 cup of black beans in water overnight. This will help them cook faster and more evenly.
In a large pot, heat some olive oil (about 2 tablespoons) and sauté 1 onion, 3 cloves of minced garlic, 2 carrots (diced), and 2 bell peppers (chopped) until they are slightly softened.
Drain and rinse the soaked black beans, then add them to the pot with the sautéed veggies. Also, add 2 bay leaves, 1 teaspoon of cumin, 1 teaspoon of paprika, and 1/2 teaspoon of smoked paprika.
Pour in enough vegetable broth to cover the beans and veggies (about 4 cups). Bring everything to a boil, then reduce the heat and let it simmer for about 1 to 1.5 hours, or until the beans are tender and the flavors have melded together.
Slice 4 vegan sausages into bite-sized pieces and add them to the pot. Let everything simmer for another 20 minutes to allow the flavors to blend.
Taste the Feijoada and adjust the seasoning if needed. Add salt, pepper, or more spices according to your preference.
Remove the bay leaves and serve your vegan Feijoada over rice. Top it off with some fresh cilantro, a squeeze of lime, and enjoy the party in your mouth!
