1

Prepare the Strawberry Layers

Begin by washing and hulling 2 pounds of fresh strawberries. Slice them into thin, even layers. You can use a sharp knife or a strawberry slicer if you have one. Set them aside.

2

Make the Whipped Cream

In a large mixing bowl, combine 2 cups of heavy cream, 1/4 cup of powdered sugar, and 1 teaspoon of vanilla extract. Using an electric mixer, whisk the ingredients together on medium-high speed until soft peaks form. Be careful not to overwhip, or you'll end up with butter!

3

Prepare the Cake Layers

Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans. In a separate mixing bowl, combine 2 1/2 cups of all-purpose flour, 1 1/2 cups of granulated sugar, 1 tablespoon of baking powder, and a pinch of salt. In a small bowl, whisk together 1 cup of milk, 1/2 cup of vegetable oil, 3 eggs, and 2 teaspoons of vanilla extract. Gradually pour the wet ingredients into the dry ingredients, stirring until just combined. Divide the batter evenly between the two cake pans and smooth the tops with a spatula.

4

Bake and Assemble the Cake

Pop the cake pans into the preheated oven and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool completely on wire racks. Once cooled, use a serrated knife to carefully slice each cake in half horizontally, creating four cake layers. Place one layer on a serving plate and spread a generous amount of whipped cream on top. Add a layer of sliced strawberries, then another layer of cake and repeat the process until all layers are used. Finish with a dollop of whipped cream and a few strawberries on top for garnish.
