Gather all the necessary ingredients for your rainbow sushi roll. You'll need sushi rice, nori sheets, cucumber, avocado, carrots, red cabbage, smoked salmon, crab sticks, pickled ginger, wasabi, and soy sauce. Wash and julienne the vegetables, slice the avocado and smoked salmon into thin strips, and set aside.
Place a sheet of nori on a bamboo sushi mat. Wet your hands with water, grab a handful of sushi rice, and evenly spread it over the nori, leaving about a 1-inch border at the top. Press the rice gently to ensure it sticks well.
Arrange a row of cucumber, avocado, carrots, red cabbage, smoked salmon, and crab sticks in the center of the rice-covered nori sheet. Be creative and layer the ingredients in a rainbow pattern to create an eye-catching effect.
Using the bamboo mat, tightly roll the sushi from the bottom, applying gentle pressure to keep the filling intact. Wet the top border of the nori sheet with water to seal the roll.
Once the roll is tightly formed, remove it from the bamboo mat and place it on a cutting board. Use a sharp knife to slice the roll into bite-sized pieces. Serve your rainbow sushi rolls with pickled ginger, wasabi, and soy sauce for dipping.
