Prepare the Pastry Dough

In a mixing bowl, combine 1 ¾ cups all-purpose flour, ¼ cup granulated sugar, and ¼ teaspoon salt. Cut in ½ cup unsalted butter until mixture resembles coarse crumbs. Gradually add 2-3 tablespoons ice cold water and mix until dough comes together. Shape into a disk, wrap in plastic wrap, and chill for at least 1 hour.

Roll out the Dough

On a lightly floured surface, roll out the chilled dough into a 12-inch circle. Carefully transfer the dough to a 9-inch tart pan with a removable bottom. Press the dough into the bottom and sides of the pan, trimming any excess. Place the pan in the refrigerator for 15-20 minutes to chill.

Pre-bake the Crust

Preheat the oven to 375°F (190°C). Line the chilled tart crust with parchment paper or aluminum foil, and fill with pie weights or dried beans. Bake for 15 minutes. Remove the weights and paper/foil, then bake for an additional 10 minutes, or until the crust is golden brown. Allow the crust to cool completely.

Prepare the Filling

In a mixing bowl, beat together 1 cup cream cheese, ¼ cup powdered sugar, and 1 teaspoon vanilla extract until smooth. Spread the cream cheese mixture evenly over the cooled tart crust.

Top with Fruits and Nuts

Arrange a variety of sliced fruits and nuts on top of the cream cheese filling. You can use berries, sliced peaches, sliced kiwis, chopped almonds, or any other fruits and nuts you prefer. Get creative and make it beautiful!
