In a medium saucepan, combine 1 cup of water, 1/2 cup of unsalted butter, 2 tablespoons of granulated sugar, and 1/4 teaspoon of salt. Bring the mixture to a boil over medium heat.
Once the mixture is boiling, reduce the heat to low and add 1 cup of all-purpose flour. Stir vigorously until the mixture forms a ball and pulls away from the sides of the saucepan.
Transfer the dough to a mixing bowl and let it cool for about 5 minutes. This will ensure that the dough is not too hot to handle.
Take small portions of the dough and roll them into balls, about 1 inch in diameter. Place the balls on a baking sheet lined with parchment paper.

In a shallow bowl, mix together 1/2 cup of granulated sugar and 1 tablespoon of ground cinnamon. Set aside.

Carefully lower a few frozen churro balls into the hot oil using a slotted spoon or mesh strainer. Fry them for about 3-4 minutes or until they turn golden brown and crispy. Avoid overcrowding the pan.
Remove the fried churro balls from the oil and transfer them to the bowl of cinnamon sugar coating. Gently roll the balls to coat them evenly.
Allow the churro balls to cool slightly. Then, slice each ball in half horizontally. Place a scoop of your favorite ice cream on the bottom half and cover it with the top half. Repeat with the remaining churro balls.
