In a saucepan, combine 1 cup of water, 2 tablespoons of sugar, 1/2 teaspoon of salt, and 1/2 cup of unsalted butter. Bring the mixture to a boil. Once boiling, remove from heat and add 1 cup of all-purpose flour. Stir vigorously until the dough forms a ball.
Heat vegetable oil in a deep fryer or large pot to 375°F (190°C). Transfer the churro dough to a piping bag fitted with a star tip. Pipe 4-6 inch long churros into the hot oil, cutting them off with a pair of scissors. Fry until golden brown, about 2-3 minutes per side. Remove the churros from the oil and drain on a paper towel-lined plate.
In a small bowl, mix together 1/4 cup of sugar and 1 teaspoon of ground cinnamon. Roll the warm churros in the cinnamon-sugar mixture until evenly coated.
Take your favorite flavor of ice cream and let it soften slightly at room temperature. Sandwich a scoop of ice cream between two churros and gently press together. You can also roll the edges of the ice cream sandwiches in colorful sprinkles, if you'd like.
Place the Churro Ice Cream Sandwiches on a baking sheet lined with parchment paper and freeze for at least 1 hour. This will allow the ice cream to firm up and the churros to become extra crispy. Once frozen, they're ready to enjoy! Serve them at your fiesta and watch everyone do the happy dance.
