In a medium saucepan, combine 1 cup of water, 1/2 cup of unsalted butter, 1 tablespoon of sugar, and a pinch of salt. Bring the mixture to a boil over medium-high heat. Once the butter has fully melted, remove the saucepan from the heat and add 1 cup of all-purpose flour. Stir vigorously until the mixture forms a smooth ball of dough.
Heat vegetable oil in a deep pot or fryer to 375°F (190°C). Using a piping bag fitted with a star tip, pipe the churro dough into long tubes, around 4 inches in length. Carefully drop the churro tubes into the hot oil, frying them until golden brown and crisp. Remove the churros from the oil and allow them to drain on a paper towel-lined plate.
In a shallow dish, mix together 1/2 cup of sugar and 1 tablespoon of ground cinnamon. Roll the fried churros in the cinnamon sugar mixture until they are fully coated. Set aside.
Take one churro tube and spread a generous amount of your favorite ice cream flavor on top. Place another churro tube on top of the ice cream, pressing gently to create a sandwich. Repeat with more churros and ice cream to build a tower of churro ice cream sandwiches. You can vary the flavors of ice cream for a delicious assortment. Serve immediately and enjoy!
