In a medium-sized saucepan, heat 1 cup of water, 2 tablespoons of sugar, 1/2 teaspoon of salt, and 1/2 cup of unsalted butter over medium heat. Bring the mixture to a boil. Remove from heat and stir in 1 cup of all-purpose flour. Mix until the dough comes together.
Heat vegetable oil in a large, deep skillet or pot to a temperature of about 375°F (190°C). Transfer the churro dough into a piping bag fitted with a large star tip. Carefully pipe about 4-inch strips of dough into the hot oil. Fry the churros until they are golden brown and crispy, usually around 2-3 minutes per side. Remove them from the oil and place them on a paper towel-lined plate to drain excess oil.
In a shallow dish, mix together 1/2 cup of sugar and 1 teaspoon of cinnamon. Roll each cooled churro in the sugar-cinnamon mixture until coated evenly. Set them aside.
Select your favorite ice cream flavor(s). Classic choices like vanilla, chocolate, and strawberry work great, but feel free to get creative with unique flavors too!
Take one churro and place a generous scoop of ice cream on top. Take another churro and gently press it onto the ice cream, creating a churro ice cream sandwich. Repeat with the remaining churros and ice cream. Serve immediately and enjoy!
