Craving that ooey-gooey melty goodness on your Fancy Vegan Burger? Learn how to achieve the perfect plant-based cheese-like melt at home.
Take note
A word of caution: this cheese-like melt may cause excessive burger cravings and happiness. Proceed with caution.
Preheat your oven to 400°F (200°C) and gather the following ingredients: 1 cup of raw cashews (soaked overnight and drained), 1/4 cup of nutritional yeast, 1 tablespoon of lemon juice, 1 teaspoon of white miso paste, 1/2 teaspoon of garlic powder, 1/2 teaspoon of onion powder, 1/4 teaspoon of turmeric powder, 1/4 teaspoon of paprika, 1/2 teaspoon of salt, 1/2 cup of plant-based milk, and 1/4 cup of tapioca starch.
In a blender, combine the soaked cashews, nutritional yeast, lemon juice, white miso paste, garlic powder, onion powder, turmeric powder, paprika, salt, plant-based milk, and tapioca starch. Blend until smooth and creamy.
Transfer the blended mixture to a saucepan and heat over medium heat. Stir continuously until the mixture thickens and starts to form a stretchy consistency. This usually takes about 5-7 minutes.
Once the mixture has thickened, it's time to add that cheese-like melt to your Fancy Vegan Burger! Simply spoon the hot mixture onto your burger patty or assemble your burger with your desired toppings and drizzle the cheese-like melt on top.
For an extra melty finish, place your assembled burger under the broiler for 1-2 minutes, or until the cheese-like melt starts to bubble and slightly brown. Keep a close eye on it to prevent burning!
