Be careful not to overstuff your wrap or it might burst! And don't forget to wash your hands thoroughly when handling raw chicken.
In a bowl, mix together 2 tablespoons of olive oil, 1 tablespoon of lemon juice, 1 teaspoon of minced garlic, and a pinch of salt and pepper. Add 2 boneless, skinless chicken breasts and coat them evenly with the marinade. Let it sit for 15 minutes.
Heat a grill pan or skillet over medium heat. Cook the marinated chicken breasts for about 6-8 minutes per side, or until they reach an internal temperature of 165°F (75°C). Remove from heat and let them rest for a few minutes before slicing.
In a small bowl, whisk together 3 tablespoons of mayonnaise, 1 tablespoon of Dijon mustard, 1 minced garlic clove, 1 tablespoon of lemon juice, 1/4 cup of grated Parmesan cheese, and a pinch of salt and pepper. Set aside.
Spread a generous amount of Caesar dressing onto a large tortilla. Place a handful of romaine lettuce leaves on top. Add sliced cooked chicken, grated Parmesan cheese, and a sprinkle of black pepper. Roll up the tortilla tightly, tucking in the sides as you go.
Use a sharp knife to slice the wrap into halves or thirds, depending on your preference. Serve immediately and enjoy!
