To make these decadent brownie cups, you'll need: - 1 cup of unsalted butter - 2 cups of sugar - 4 large eggs - 1 teaspoon of vanilla extract - 1 cup of all-purpose flour - ⅔ cup of cocoa powder - ½ teaspoon of baking powder - ¼ teaspoon of salt - Optional: mini chocolate chips for extra chocolatey goodness!
Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners. In a large bowl, melt the butter in the microwave or on the stovetop. Once melted, stir in the sugar until well combined. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract. In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. If desired, fold in a handful of mini chocolate chips.
Using a spoon or cookie scoop, fill each cupcake liner about ¾ full with the brownie batter. Smooth the tops with the back of a spoon for an even appearance. If you're feeling fancy, sprinkle some extra mini chocolate chips on top for a little decoration (and extra deliciousness).
Place the filled muffin tin in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the center of a brownie cup comes out with a few moist crumbs. Remove from the oven and allow the brownie cups to cool in the tin for a few minutes. Then, transfer them to a wire rack to cool completely. Once they're cool enough to handle, it's time to indulge in some chocolatey bliss. Enjoy!
