In a saucepan over medium heat, combine 1 cup of water, 1/2 cup of unsalted butter, and a pinch of salt. Once the butter has melted, add 1 cup of all-purpose flour and stir vigorously until the mixture forms a smooth, thick dough.
Remove the saucepan from the heat and let the dough cool slightly. Then, one at a time, beat in 4 eggs, making sure each egg is fully incorporated before adding the next. Mix until the dough becomes smooth and shiny.
Preheat your oven to 400°F (200°C). Fill a piping bag fitted with a round tip with the dough. Pipe the dough into 4-inch (10cm) long strips onto a parchment-lined baking sheet, leaving enough space in between for them to expand.
Place the baking sheet in the preheated oven and bake the eclairs for 25-30 minutes, or until they turn golden brown and puffed up. Resist the urge to open the oven door while they're baking, or they might deflate!
In a mixing bowl, combine 1 cup of heavy cream, 1 tablespoon of powdered sugar, and 1 teaspoon of vanilla extract. Whip the cream until soft peaks form. Gently fold in a handful of your favorite forest fruits, such as raspberries, blackberries, and blueberries.
Once the eclairs have fully cooled, carefully slice each one in half lengthwise. Pipe or spoon the forest fruit filling into the bottom half of each eclair. Place the top halves back on, then sprinkle with powdered sugar for an extra magical touch.
