In a saucepan, combine 1 cup of heavy cream, 1 cup of milk, and 1/2 cup of sugar. Heat the mixture over medium heat until the sugar dissolves and the mixture is steaming but not boiling.
In a separate small bowl, sprinkle 2 teaspoons of powdered gelatin over 4 tablespoons of cold water. Let it sit for about 5 minutes until the gelatin becomes soft and spongy.
Once the gelatin is bloomed, add it to the warm cream mixture and stir until fully dissolved. Remove the saucepan from heat and stir in 1 teaspoon of vanilla extract. Pour the mixture into individual serving glasses or ramekins. Let them cool on the counter for about 20 minutes, then refrigerate for at least 2 hours or until set.
In a small saucepan, combine 1 cup of mixed berries (such as raspberries, blueberries, and strawberries), 1/4 cup of sugar, and 1 tablespoon of lemon juice. Cook over medium heat until the berries break down and release their juices, about 5-7 minutes. Remove from heat and let it cool.
Once the panna cotta is fully set, top each serving with a spoonful of the berry compote. You can also garnish with fresh mint leaves for extra freshness. Dive in and enjoy the creamy indulgence combined with the tangy burst of berries!
