Start by crushing the biscuits into fine crumbs. You can do this by placing them in a resealable bag and using a rolling pin or by using a food processor.
In a bowl, combine the crushed biscuits with the melted butter. Mix well until all of the crumbs are coated with butter. This will help the base hold together.
Transfer the biscuit mixture into a greased cake or tart pan. Use the back of a spoon or your fingers to press the mixture firmly into the bottom and up the sides of the pan. This will form the crust of your cheesecake.
In a small saucepan, melt the butter over medium heat. Add the sugar and stir until it has dissolved. Pour in the condensed milk and stir continuously until the mixture thickens and turns golden brown. Remove from heat and stir in a pinch of salt.
In a large mixing bowl, beat the cream cheese until smooth and creamy. Add in the salted caramel sauce and mix until well combined. Make sure there are no lumps in the mixture.
Pour the cheesecake filling into the prepared crust. Smooth out the top with a spatula to create an even layer.
Place the cheesecake in the refrigerator and let it chill for at least 4 hours, or overnight if possible. Before serving, drizzle some extra salted caramel sauce on top and sprinkle with a pinch of sea salt for that irresistible salty sweetness.
