In a food processor, combine 2 cups of cooked chickpeas, 1/2 cup of finely chopped onion, 3 cloves of minced garlic, 1/4 cup of chopped fresh parsley, 2 tablespoons of chickpea flour, 1 tablespoon of ground cumin, 1 teaspoon of ground coriander, 1/2 teaspoon of salt, and a pinch of cayenne pepper. Blend until the mixture is well combined and starts to come together.
Using wet hands, form the falafel mixture into small patties or balls, about 1 inch in diameter. Place them on a baking sheet lined with parchment paper.
Preheat your oven to 400°F (200°C). Drizzle the falafel with olive oil and bake for 20-25 minutes, or until they are golden brown and crispy.
While the falafel bakes, assemble the bowl with your favorite ingredients. Start with a base of cooked quinoa or brown rice. Add a variety of fresh vegetables such as sliced cucumber, cherry tomatoes, shredded carrots, and mixed greens. Don't forget to sprinkle some chopped fresh herbs like mint or cilantro for extra flavor.
To finish off your falafel bowl, drizzle it with a generous amount of tahini sauce. You can make your own by combining 1/4 cup of tahini, 2 tablespoons of lemon juice, 1 tablespoon of maple syrup, and a pinch of salt. Mix well until smooth and creamy.
