In a food processor, combine 1 cup of crushed graham crackers, 1/4 cup of melted butter, and 2 tablespoons of sugar. Pulse until the mixture resembles fine crumbs. Press the crust mixture into the bottom and sides of individual tartlet pans. Place the pans in the refrigerator to set while you prepare the filling.
In a mixing bowl, whisk together 1 cup of coconut milk, 1/4 cup of sugar, 1 teaspoon of turmeric powder, and a pinch of salt. Add 2 tablespoons of cornstarch and whisk until smooth. Transfer the mixture to a saucepan and cook over medium heat, stirring constantly, until thickened. Remove from heat and stir in 1 teaspoon of vanilla extract.
Take the tartlet pans out of the refrigerator and pour the tropical turmeric filling into each crust. Use a spoon to smooth the surface. Place the tartlets in the refrigerator for at least 2 hours to set.
Before serving, top each tartlet with a slice of fresh mango, a sprinkle of shredded coconut, and a drizzle of honey. Get creative and add any other tropical fruits you desire!
