Start by preheating your oven to 250°F (120°C). This low temperature will help create the perfect pavlova with a crispy exterior and a soft, marshmallow-like interior.
In a clean mixing bowl, add 4 egg whites. Whip them on medium-high speed until they become frothy. Gradually add 1 cup of granulated sugar, one spoonful at a time, while continuing to whip. Keep whipping until the mixture forms stiff peaks and becomes glossy.
Gently fold in 1 tablespoon of passionfruit juice and 1 teaspoon of passionfruit extract into the whipped egg whites. This will infuse our pavlova with the tropical taste of Hawaii. Don't overmix, we want to keep those beautiful air bubbles intact!
Line a baking sheet with parchment paper. Spoon the whipped egg white mixture onto the prepared sheet, shaping it into a round mound. Create a slight well in the center to hold the toppings later. Remember, it's all about that picture-perfect pavlova!
Place the baking sheet in the preheated oven and bake for about 1 hour and 30 minutes. The pavlova should be dry to the touch and slightly golden. Turn off the oven and let it cool completely inside with the door slightly ajar. This will prevent any sudden temperature changes from causing the pavlova to collapse.
Once the pavlova has cooled, it's time to add the finishing touches. Whip up some fresh cream and spread it over the top of the pavlova. Then, decorate with slices of fresh pineapple, kiwi, and passionfruit pulp. Feel free to get creative and add any other tropical fruits you love!
