Prepare the dough

In a mixing bowl, combine 2 cups of flour, 1/4 cup of sugar, 2 teaspoons of baking powder, and a pinch of salt. Whisk it all together until well combined.

In a small saucepan, heat 1 cup of milk over low heat. Add 2 tablespoons of dried lavender flowers and 2 tablespoons of honey. Let it simmer for 5 minutes to infuse the flavors. Remove from heat and strain out the lavender.

Pour the infused milk into the dry ingredients, along with 1/4 cup of melted butter and 1 teaspoon of vanilla extract. Mix until a dough forms. Knead the dough for a few minutes until smooth. Place it in a greased bowl, cover with a towel, and let it rise for about 1 hour.

Shape and fry the doughnuts

After the dough has risen, punch it down and roll it out on a floured surface to about 1/2-inch thickness. Use a doughnut cutter or a round cookie cutter to cut out doughnut shapes. Heat oil in a deep pan to 350°F (175°C). Carefully drop the doughnuts into the hot oil and fry until golden brown, turning them once. Remove from the oil and let them cool on a wire rack.
