Heat 2 tablespoons of oil in a large pot over medium-high heat. Add 1 sliced onion and cook until translucent. Then, add the curry paste from step 1 and cook for 2 minutes, stirring constantly to release the fragrant aromas.
Pour in 1 can (14 oz) of coconut milk and 1 cup of vegetable broth. Stir well to combine the flavors. Bring the mixture to a simmer and let it cook for 10 minutes.
Now comes the fun part! Choose your favorite vegetables and add them to the pot. You can select from options like sliced bell peppers, broccoli florets, snap peas, sliced carrots, or baby corn. Feel free to mix and match to create your own unique combination.
Allow the curry to simmer for an additional 10-15 minutes, or until the vegetables are tender but still slightly crisp. Serve your customized Thai Green Curry over a bed of steamed jasmine rice and garnish with fresh cilantro leaves.
