Bake the Muffins

Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners. Let the muffins cool completely before proceeding to the next step.

Prepare the Mirror Glaze

In a small saucepan, combine 1 cup of granulated sugar, 1/2 cup of water, and 1/2 cup of heavy cream. Bring the mixture to a boil over medium heat, stirring constantly. Once it reaches a boil, reduce the heat and simmer for 5 minutes. Remove the saucepan from the heat and stir in 1 teaspoon of instant coffee granules until dissolved. Let the glaze cool for about 5 minutes.

Glaze the Muffins

Take each cooled muffin and dip the top into the mirror glaze, allowing any excess glaze to drip off. Place the glazed muffins on a wire rack set over a baking sheet to catch any drippings. Let the glaze set for about 10 minutes. Repeat this step for all the muffins, making sure to reheat the glaze if it becomes too thick.
