Warm up with a comforting bowl of homemade, creamy tomato soup. Cozy, delicious, and perfect for chilly days.
Take note
Be careful when working with hot ingredients and remember to taste your soup along the way to adjust the seasoning to your liking.
Gather all the ingredients you'll need: 4 cups of canned crushed tomatoes, 1 cup of heavy cream, 1 small onion (chopped), 2 cloves of garlic (minced), 2 tablespoons of butter, 1 tablespoon of sugar, 1 teaspoon of dried basil, salt and pepper to taste.
Heat the butter in a large pot over medium heat. Add the chopped onion and minced garlic. Sauté until the onion turns translucent and the garlic becomes fragrant, about 3-4 minutes.
Pour in the crushed tomatoes and stir in the dried basil, sugar, salt, and pepper. Let the soup simmer on low heat for about 15 minutes to allow the flavors to meld together.
Using an immersion blender or a countertop blender, puree the soup until smooth and creamy. Be careful with the hot soup and blend in batches if using a countertop blender.
Pour in the heavy cream and stir until well combined. Continue to simmer the soup for another 5 minutes to heat through.
Give the soup a taste and adjust the seasoning with more salt and pepper if needed. If it's too acidic, add a touch more sugar to balance the flavors.
Ladle the creamy tomato soup into bowls, garnish with a sprinkle of dried basil if desired, and serve alongside your favorite crusty bread or grilled cheese sandwich. Get ready to savor every silky spoonful!
