Prepare the Ingredients

Gather all the necessary ingredients: 8 beef tenderloin medallions, 8 slices of prosciutto, 1 sheet of puff pastry (thawed), 1 tablespoon of Dijon mustard, 1 egg (beaten), salt and pepper to taste. Also preheat your oven to 400°F (200°C).

Season and Sear the Beef

Season the beef medallions with salt and pepper. Heat a skillet over high heat and sear the medallions for about 1 minute on each side, just until browned. Remove from heat and set aside to cool.

Take a slice of prosciutto and place a seared beef medallion in the center. Wrap the prosciutto around the beef, making sure it's fully covered. Repeat with the remaining medallions and prosciutto slices.

Spread a thin layer of Dijon mustard onto each side of the wrapped beef. Roll out the puff pastry sheet and cut it into 8 equal squares. Place each beef-wrapped medallion in the center of a puff pastry square. Fold the corners of the pastry over the beef and press to seal.
