1

Prepare the crust

In a bowl, combine 1.5 cups of graham cracker crumbs and 1/4 cup of melted butter. Mix well until the crumbs are evenly coated with butter.

2

Layer the crust

Take a glass or a dessert dish and press a layer of the crumb mixture into the bottom. Use the back of a spoon to press it firmly and create a nice even layer.

3

Make the dragonfruit cheesecake filling

In a separate bowl, mix together 8 ounces of softened cream cheese, 1/2 cup of powdered sugar, and 1/2 teaspoon of vanilla extract. Blend until smooth and creamy.

4

Add the pink dragonfruit puree

Puree a pink dragonfruit and strain the juice. Add 1/4 cup of the dragonfruit juice into the cream cheese mixture and mix well until fully incorporated.

5

Layer the parfait

Take a spoonful of the dragonfruit cheesecake filling and spread it over the crust in the glass. Repeat this process, alternating layers of crust and filling, until you reach the top of the glass.

6

Chill and garnish

Pop the parfait into the fridge and let it chill for at least 2 hours, or until set. Before serving, garnish with fresh dragonfruit slices and a sprinkle of graham cracker crumbs.
