In a food processor, pulse 1 and a half cups of graham cracker crumbs, 1/4 cup of melted butter, and 2 tablespoons of granulated sugar until well combined. Press the mixture into the bottom of a 9x9-inch baking pan. Place the pan in the fridge to chill while you work on the filling.
In a blender or food processor, combine 1 cup of dragonfruit puree (fresh or frozen), 16 ounces of cream cheese (softened), 1/2 cup of powdered sugar, and 2 tablespoons of lemon juice. Blend until smooth and creamy.
Take the crust out of the fridge and pour the dragonfruit filling over it. Use a spoon or spatula to gently swirl the filling, creating a marbled effect if desired.
Preheat your oven to 325°F (163°C). Bake the cheesecake bars for about 25-30 minutes or until the edges are set and the center is slightly jiggly. Remove from the oven and let them cool at room temperature for 1 hour, then transfer the pan to the fridge to chill for at least 3 hours or overnight.
Once the bars are fully chilled and firm, remove them from the fridge. Use a sharp knife to cut them into squares or bars. Serve chilled and enjoy the tropical delight!
