To make our rice pudding, you'll need: 1 cup of uncooked rice, 4 cups of milk, 1/2 cup of sugar, 1 teaspoon of vanilla extract, 1/2 teaspoon of ground cinnamon, a pinch of salt, and some raisins (optional).
In a medium-sized pot, combine the uncooked rice, milk, sugar, vanilla extract, cinnamon, and salt. Give it a good stir and bring the mixture to a gentle boil over medium heat.
Once the mixture is boiling, reduce the heat to low and let it simmer uncovered for about 30-40 minutes. Stir occasionally to prevent the rice from sticking to the bottom of the pot.
If you want to jazz up your rice pudding, now's the time to do it! You can add a handful of raisins for some extra sweetness and texture. Stir them into the pudding and let it simmer for another 5 minutes.
Once the rice is cooked and the pudding has reached your desired consistency, remove it from the heat and let it cool for a few minutes. The pudding will thicken as it cools, so keep that in mind.
Scoop the luscious rice pudding into serving bowls and sprinkle a little extra cinnamon on top for that extra touch of deliciousness. Serve it warm or chilled, depending on your preference. Grab a spoon and dive in!
