In a large bowl, combine 2 cups of all-purpose flour, 1/2 teaspoon of salt, and 1/2 teaspoon of baking soda. Create a well in the center and crack 2 large eggs into it. Gradually mix the eggs into the flour mixture until crumbly. Knead the dough with your hands until it forms a smooth ball. Cover the dough with plastic wrap and let it rest for 30 minutes.
After the dough has rested, divide it into 4 equal portions. Take one portion and flatten it with a rolling pin or pasta machine until it reaches a thickness of about 1/8 inch. Repeat with the remaining portions. Dust the noodle sheets with flour to prevent sticking.
Bring a pot of water to a boil and add a pinch of salt. Gently place one noodle sheet into the boiling water and cook for 1-2 minutes, or until the noodles are al dente. Remove the noodle sheet with tongs or a slotted spoon and transfer it to a plate. Repeat with the remaining noodle sheets.
Using a circular mold or a wide-mouthed glass, cut out 4 bun-shaped discs from each noodle sheet. Optional: Toast the bun discs in a lightly greased pan for a crispy texture.
Cook your favorite burger patties according to your liking. Place a burger patty on a ramen bun disc, and add your desired toppings such as lettuce, tomato, cheese, and sauce. Place another ramen bun disc on top to complete the burger. Enjoy!
