To create your vegetarian Ramen Burger, you'll need: - 2 packs of ramen noodles - 2 large portobello mushroom caps - 1/4 cup soy sauce - 2 tablespoons sesame oil - 2 tablespoons rice vinegar - 2 tablespoons honey - 1 tablespoon Sriracha sauce - 1/2 cup mayonnaise - 1 cup shredded lettuce - 1/2 cup sliced cucumber - 1/4 cup thinly sliced green onions
Cook the ramen noodles according to the package instructions. Once cooked, drain and rinse under cold water. Set aside.
In a shallow dish, combine soy sauce, sesame oil, rice vinegar, honey, and Sriracha sauce. Place the mushroom caps in the marinade and let them sit for at least 15 minutes, flipping them halfway through.
Heat a grill pan or grill over medium-high heat. Remove the mushroom caps from the marinade and grill them for about 4-5 minutes per side, or until they are tender and juicy.
In a small bowl, mix together mayonnaise and Sriracha sauce. Adjust the amount of Sriracha to your preferred level of spiciness. Set aside.
Place a cooked ramen noodle patty on a plate. Top it with a grilled mushroom cap, followed by shredded lettuce, sliced cucumber, and green onions. Drizzle the spicy mayo sauce on top. Finish it off with another ramen noodle patty to create your vegetarian Ramen Burger. Repeat this process for the remaining ingredients.
