Be careful not to overstuff your French Toast, or you'll have a delicious mess on your hands!
Wash and gently pat dry 1 cup of fresh mixed berries. Slice any larger berries, such as strawberries, into bite-sized pieces.
In a bowl, combine 4 oz of softened cream cheese, 2 tbsp of powdered sugar, and 1/2 tsp of vanilla extract. Mix until smooth and well combined.
In a shallow dish, whisk together 4 large eggs, 1/2 cup of milk, 1 tsp of vanilla extract, and a pinch of salt. Dip 4 slices of bread into the egg mixture, allowing them to soak for a few seconds on each side.
Spread a generous amount of the cream cheese filling onto 2 slices of the soaked bread. Top with a handful of the prepared berries, then sandwich with another slice of soaked bread.
Heat a non-stick skillet or griddle over medium heat and melt 2 tbsp of butter. Place the assembled French Toast in the skillet and cook until golden brown, about 2-3 minutes per side.
