Hard-boil the eggs

Place the eggs in a saucepan and cover with cold water. Bring the water to a boil over medium-high heat and let the eggs cook for about 9-10 minutes. Then, remove from heat and let them cool.

Peel and slice the eggs

Once the eggs are cool, carefully peel off the shell and slice each egg in half lengthwise. Pop the yolks out into a bowl and place the egg whites on a serving platter.

Prepare the yolk mixture

Mash the egg yolks with a fork until they're nice and crumbly. Add mayonnaise, Dijon mustard, a pinch of salt, a dash of pepper, and any other desired seasonings. Mix everything together until well combined.

Fill the egg whites

Using a spoon or a piping bag, carefully scoop the yolk mixture into the hollows of the egg whites. Be generous, but make sure to leave a little bit of space for the caviar on top.

Top with caviar
