Hot oil alert! Be careful when working with hot oil to avoid any nasty accidents. Make sure to keep an eye on your chips as they cook - they can burn quickly if left unattended.
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Rinse your potatoes and scrub them clean. Pat them dry with a kitchen towel.
Using a sharp knife, carefully cut your potatoes in half lengthwise. With a spoon, scoop out the potato flesh, leaving a thin layer attached to the skin. Save the flesh for another delicious recipe.
Brush the potato skins with olive oil, making sure to coat both sides. Sprinkle salt, pepper, and any other seasonings you desire, like paprika or garlic powder. Place the skins on the prepared baking sheet, skin side down. Bake for 15 minutes until golden and crispy.
Carefully flip the potato skins using tongs or a spatula. Bake for an additional 5-10 minutes until the other side is crispy too. Keep an eye on them to prevent burning.
Once done, remove the potato skin chips from the oven and let them cool for a few minutes. Serve them up as a snack, and watch them disappear within seconds!
