Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper. We're getting ready to turn up the heat!
Scrub 4 medium-sized russet potatoes under running water to remove any dirt. Pat them dry, then slice each potato in half lengthwise. Carefully scoop out the potato flesh, leaving about 1/4 inch of potato attached to the skin. Save the scooped-out potato flesh for another delicious recipe.
In a small bowl, mix together 2 tablespoons of melted butter, 2 tablespoons of hot sauce (we recommend Frank's RedHot), 1/2 teaspoon of garlic powder, 1/2 teaspoon of onion powder, 1/2 teaspoon of paprika, and a pinch of salt. Don't be shy with the spices, we want these chips to have a fiery kick!
Brush the spicy mixture all over the potato skins, making sure to coat both the inside and outside. Place the potato skins on the lined baking sheet, skin side down, and pop them in the preheated oven. Bake for 20-25 minutes until the edges are crispy and the skins are golden brown.
Remove the potato skins from the oven and let them cool for a few minutes. Sprinkle some chopped fresh cilantro or parsley on top for a burst of freshness. Serve these flavor-packed spicy buffalo potato skin chips with a side of creamy ranch dressing for dipping, and watch them disappear!
