Take 1 cup of dried chickpeas and soak them in water overnight. This will ensure they become nice and tender.
After soaking, drain and rinse the chickpeas thoroughly. You don't want any excess water in your falafel mixture.
In a food processor, combine the soaked chickpeas, 1/2 cup of fresh parsley leaves, 1/2 cup of fresh cilantro leaves, 1 small onion (roughly chopped), 4 cloves of garlic, 1 teaspoon of cumin, 1 teaspoon of coriander, 1/2 teaspoon of salt, and a squeeze of lemon juice. Blitz it all together until you have a smooth mixture.
Using your hands, shape the falafel mixture into small patties. Make sure they're evenly sized so they cook evenly.
Heat up some vegetable oil in a deep pan. Once the oil is hot enough (around 350°F/180°C), carefully drop the falafel patties into the oil. Cook them for about 3-4 minutes on each side, until they turn golden brown and crispy.
To create the creamy tahini sauce, combine 1/2 cup of tahini paste, the juice of 1 lemon, 2 tablespoons of water, 2 cloves of minced garlic, and a pinch of salt. Whisk it all together until smooth and creamy.
Arrange the freshly fried falafel on a plate and drizzle generously with the tahini sauce. Serve with pita bread, sliced cucumber, tomato, and a sprinkle of fresh herbs. Dig in and savor the deliciousness!
