In a food processor, combine 2 cups of cooked chickpeas, 1/2 cup of chopped fresh parsley, 1/2 cup of chopped fresh cilantro, 3 cloves of minced garlic, 1 small finely chopped onion, 2 tablespoons of all-purpose flour, 1 teaspoon of ground cumin, 1 teaspoon of ground coriander, 1/2 teaspoon of baking powder, and a pinch of salt. Blend until a coarse mixture forms.
Using your hands, shape the falafel mixture into small patties, about 1 inch in diameter. If the mixture feels too wet, add a bit more flour to bind it together. Place the patties on a baking sheet lined with parchment paper.
