Tired of boring meals? Bring color to your plate with our vibrant Falafel Bowl recipe. It's a feast for the eyes and the taste buds.
Take note
Please note that this recipe includes frying the falafel, so exercise caution when dealing with hot oil. Also, be careful when handling sharp knives and hot pans.
In a food processor, combine 1 can of chickpeas, 1/2 cup fresh cilantro, 1/2 cup fresh parsley, 1/4 cup diced onion, 2 cloves of garlic, 2 tablespoons of flour, 1 teaspoon of ground cumin, 1 teaspoon of ground coriander, 1/2 teaspoon of salt, and a squeeze of lemon juice. Blend until everything is well mixed and forms a thick paste.
Using your hands, scoop out spoonfuls of the falafel mix and shape them into small patties. Heat a frying pan with enough oil to cover the falafel halfway. Carefully place the falafel patties into the hot oil and fry until they turn golden brown on both sides. Remove them from the oil and place them on a paper towel-lined plate to absorb any excess oil.
Start by arranging a bed of fresh mixed greens in a bowl. Add chopped cherry tomatoes, cucumber slices, thinly sliced red onions, and vibrant bell peppers. Sprinkle with some crumbled feta cheese for an extra flavor boost.
Place the golden falafel patties on top of the bed of mixed greens and vegetables in the bowl. Drizzle with your favorite dressing, such as tahini sauce or a zesty vinaigrette. Finally, add a squeeze of lemon juice to brighten up the flavors. Grab a fork and dive into the colorful goodness!
