Be careful not to burn yourself while frying the falafel balls. Hot oil can be quite sneaky!
In a food processor, blend together 1 cup of cooked chickpeas, 1/4 cup chopped parsley, 1/4 cup chopped cilantro, 1/2 onion, 3 cloves of garlic, 1 teaspoon cumin, 1/2 teaspoon coriander, 1/4 teaspoon cayenne pepper, and salt to taste. Blend until everything is well combined and forms a slightly chunky mixture.
Scoop out about 2 tablespoons of the falafel mixture and, using your hands, roll it into a ball shape. Repeat until you've used all the mixture, and you have a bunch of little falafel balls.
Fill a large saucepan with vegetable oil, about 2 inches deep, and heat it over medium-high heat. Once the oil is hot (around 350°F/175°C), carefully place the falafel balls in the oil, a few at a time. Fry them until golden brown and crispy, which should take about 3-4 minutes per batch. Transfer the cooked falafel balls to a paper towel-lined plate to remove excess oil.
Grab a bowl and start layering your falafel bowl with your favorite salad greens or grains as a base. Top it with the crispy falafel balls, sliced cucumbers, cherry tomatoes, red onions, and a drizzle of tahini dressing. You can also add some pickles or olives for a burst of tanginess. Enjoy!
