In a small bowl, mix together 1 packet of unflavored gelatin and 1/4 cup of cool water. Stir until the gelatin has dissolved. Let it sit for a few minutes to bloom.
Pour 1 cup of your favorite fruit juice into a saucepan. Heat it over medium heat until it comes to a simmer. This will help infuse the flavor into the jelly sweets.
Slowly pour the gelatin mixture into the heated fruit juice, stirring constantly. Continue to heat the mixture for about 5 minutes, stirring occasionally, until the gelatin is fully dissolved.
Gradually add 1/4 cup of sugar to the fruit juice-gelatin mixture, stirring constantly until the sugar is completely dissolved.
If desired, add a dash of your favorite extract or flavoring to enhance the taste. Stir well to incorporate the flavor throughout the mixture.
Carefully pour the mixture into silicone molds or a shallow dish greased with cooking spray. Let it cool at room temperature for about 30 minutes, then refrigerate for 2-3 hours until fully set.
Once the jelly sweets are completely set, gently remove them from the molds or cut them into bite-sized pieces from the dish. Enjoy the sweet and jiggly goodness!
