Take one of the cooked crepes and place it back into the frying pan. Crack an egg onto the center of the crepe. Season the egg with salt and pepper, then sprinkle on some cheese and crumbled bacon. If you prefer a vegetarian option, skip the bacon and use some sautéed spinach or other greens instead. Fold the sides of the crepe toward the center to cover the filling, creating a square or rectangular shape. Cook the filled crepe over medium heat until the egg sets.
Carefully transfer the finished filled crepe onto a plate. Feel free to add some extra toppings such as fresh herbs or a drizzle of hot sauce for an additional burst of flavor. Repeat steps 3 and 4 for the remaining crepes. Serve up these delicious creations immediately while still warm and enjoy the wow factor!
