To start off, slice 4 large onions into thin strips. Don't be afraid to shed a tear or two! Heat 2 tablespoons of butter in a large pot over medium heat, then add the onions. Cook them for about 15-20 minutes, stirring occasionally, until they become golden brown and caramelized.
Now, add 1 tablespoon of brown sugar to the pot with the onions. This will give them a hint of sweetness that even the pickiest eaters won't be able to resist. Stir it in and cook for an additional 2 minutes.
Next, pour in 6 cups of beef broth and 1 cup of chicken broth. This combination adds depth of flavor and richness to the soup. Bring it to a boil, then reduce the heat and let it simmer for 20 minutes to allow the flavors to meld together.
Preheat your oven to 350°F (175°C). While the soup is simmering, place some slices of French bread on a baking sheet. Top each slice with a generous amount of shredded Gruyère cheese. Pop the sheet in the oven for about 10 minutes, until the cheese is melted and bubbly.
You're almost there! Ladle the French Onion Soup into bowls and carefully place a cheesy crouton on top of each serving. The ooey-gooey melty cheese will be irresistible, even to those with the pickiest taste buds. Garnish with a sprinkle of fresh parsley, if desired.
