In a bowl, combine 2 pounds of beef or pork (thinly sliced), 1/4 cup of soy sauce, 2 tablespoons of brown sugar, 2 tablespoons of sesame oil, 3 cloves of minced garlic, and 1 tablespoon of grated ginger. Mix until the meat is well coated. Cover the bowl and let it marinate in the refrigerator for at least 1 hour, but overnight is even better.
Preheat your grill to medium-high heat. Remove the marinated meat from the refrigerator and thread the slices onto skewers. Grill the meat for 2-3 minutes per side, until nicely charred and cooked through. Remove from the grill and let it rest for a few minutes.
Slice open mini slider buns and spread a thin layer of Korean BBQ sauce on the bottom half of each bun. Place a grilled meat skewer on top, and add some pickled cucumbers and sliced green onions. Close the bun with the top half and secure with a toothpick. Repeat until all the sliders are assembled.
