Be careful not to overcook the eggs or they will become rubbery. Also, make sure to handle the lox with clean hands and utensils to avoid cross-contamination.
Place the eggs in a saucepan and cover with cold water. Bring the water to a boil, then reduce the heat and let the eggs simmer for 10 minutes. Remove the eggs from the heat and transfer them to a bowl of ice water to cool. Once cooled, carefully peel the eggs, being cautious not to damage the egg whites.
Slice the lox into small pieces and set aside. Cut the peeled eggs in half lengthwise and gently scoop out the yolks. Place the yolks in a mixing bowl and mash them with a fork until smooth. Add mayonnaise, Dijon mustard, chopped dill, lemon juice, and a pinch of salt and pepper to the mashed yolks. Mix well until all the ingredients are combined.
Using a spoon or a piping bag, fill each egg white half with the yolk mixture. Once all the eggs are filled, top each one with a small piece of lox for an added burst of flavor. Optionally, you can garnish with additional chopped dill or thinly sliced green onions for a pop of color.
